Directions Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes. Add the cumin and cook, stirring, for 1 minute. Add the ground beef; raise the heat to high and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chipotle and adobo sauce, oregano and salt and pepper. Simmer, partially covered, stirring from time to time, for 30 minutes. Stir in the beans and cook, partially covered, 20 minutes longer. Season, to taste, with salt and pepper. Leaves falling, Sunday football, and a bowl of chili are all you need on Sunday fun day. Preparing the chili is an activity in my family that we all enjoy. The aroma of the chili brings us into the kitchen to fix up a warm bowl. While the football game is laying, my mom will prepare the chili so by the end of the game it will be ready for us to chow down. My mom knows that the best part of the chili is the cheese that is melting right in front of you. I can't have a bowl unless I have shredded cheese right on top. The day before Thanksgiving is when the chili cook off begins. My dad’s side of the family will come together with different chili to see who has made the best. After my family wins (we win every year), we play a game of flag football. Every year we wait for the day we get to eat a variety of chili's that make your taste buds go crazy. Chili brings my family together. Being in college, it has made me realize how important family gatherings are. Thanksgiving break can not come soon enough. The chili cook off is the best and biggest family gathering we have. Autumn brings the best food and in my family food brings us together. |
